Summer Update at Fresh in the City

Things may have seemed a little quiet at fresh in the city of late; and with good reason, they have ~ on-line! But here’s a little update of what’s been going on elsewhere at fresh in the city…

Rather than working on-line so much, as I have done over the last 2 years, I took the decision to work more off-line, and in my local community, earlier this year…and that decision has taken me in other directions in my work, which I’m pleased about. I’ve recently been working with START creative in Salford; a charity, which supports the recovery of people who have developed mental illness.  The project promotes well-being and mental health through art and craft, creative activity, volunteering placements and a whole host of other ways, I’ve still to learn about. What I can say, is that it is one of the best projects I have seen and I’m honoured to be working there. It’s great to be using my nutrition and lifestyle coaching skills in a community setting again, and working in public health. 

I’ve been teaching a 6 week course at START: Finding your direction, mapping your future, and creating well-being and I am going to be running fresh menu makeover 2 day workshops there during July, which I’m really looking forward to.  I’m also looking to deliver these workshops and courses in other community organisations who would find them beneficial.  If you are interested in me delivering the courses or workshops to your organisation, or if you know of anyone who would be interested in me delivering them, then do email me at janet@freshinthecity.co.uk I am clear that getting this work out into local communities, is where my vocation lies right now, and I would love to hear from you if the work I offer is work that you or your organisation are looking for.

Work aside, I’ve also been making preparations for a sabbatical I’m very pleased to be taking later in this year. In the Autumn I am going to be spending a little time travelling in rural France.  The trip is a 1 month sabbatical away from working, and will also be a time to explore some other possibilities for myself and my life for the future.  Little to say now about that, of course, pre-sabbatical, but I will be back on-line in the Winter time, refreshed, revitalised, and I’m certain, ready for new adventures, new work, and I’ll look forward to updating you with any ‘fresh in the city’ developments at that time.

Ezine CoverA very warm winter welcome to all of you who have signed up to read the Fresh in the ezines this year and a big hello to all those people I’ve personally been working with this year…...December is one of those months where everything just seems to speed up, with lots to organise, lots of parties and events, and certainly in Manchester this week, there is a lot of rushing around going on.  December can be a time of stress & excess for many, many people and this seasons issue offers a little antidote to some of that busy, busy, busy stuff.  I’m really excited about Christmas this year.  I love buying and giving presents, I love the feel of magic in the air, and this year, as you would perhaps expect I have really enjoyed planning and preparing for a very healthy and pleasurable holiday season full of treats, delicious food, travel, indoor fun, and lots of outdoor activities. Along with my usual Christmas festivities with family in Eastbourne and in the Lake District, I will also be accompanying my boyfriend Ben, on a little surf trip to the Llyn peninsula in North Wales. Of course I’d much rather be jogging along the beach than immersed in the Irish sea at this time of the year, and that is exactly what I will be doing but it’s great for both of us to get outdoors, doing what we both love; enjoying nature, whatever the season.  A little bit of planning really does go along way, in creating the kind of holiday you want (the proper clothes help of course too!), and for any of you who feel like you’re succumbing to the pressures of excess, stress and busyness which can go hand in hand with December, and who feel like your health is going to be compromised, then take a little bit of time to decide how you can make this your freshest, most healthy Christmas year yet.  In this seasons issue, I’ve a delicious healthy granola recipe for you to try; something I make and give as a gift to friends and family at this time of year. I’ve a pampering orange spice bath soak recipe to help you destress and unwind over Christmas, and I challenge you right here, to integrate as much healthy physical activity into the holiday season as you can, whether it’s dancing, shopping (you can cover a lot of miles on a good shopping trip), having fun with the kids, carrying on playing your favourite sports or going on family walks.  Make this holiday an opportunity to help each other stay fresh, fit and feeling fantastic…And for those of you who have decided that 2010 is the year you want to finally get your body, health and fresh lifestyle organised and set up for success, I have 4 new programmes to offer you (more about these later…)  For now, I wish you all a fresh, healthy and happy Christmas, and I’ll look forward to catching up with you in 2010, until next time…

Fresh & Seasoned Recipe - Breakfast Granola

* 1 apple diced
*1 cup oats
*1/2 cup of almonds (without the skins)
*1/2 cup of ground flax seeds
*1/2 cup of hemp flour
*1 cup of sunflower seeds                                                                                                                    
*1 1/2 tsp cinnamon                                                                                                                   
*1/4tsp nutmeg                                                                                                                                     
*1/4tsp stevia
*1/4 cup of olive oil                                                                               
*1/4 cup of molasses

Instructions Blend all the ingredients together in a food processor.  Spread on a baking tray lightly oiled (I am sure this could also be made in a dehydrator for those who prefer to use that method). Bake for 1 hour at 130 degrees C.  Cool, then break into pieces.  Delicious when served with fresh almond milk.

This is a delicious breakfast cereal and sweet snack.  I like to make it for Christmas gifts.  I type up the recipe on coloured paper, pop the cereal in 1 litre glass jars, tie ribbons around them, attach the typed up recipes to the jars, and then enjoy giving them to friends and family as a healthy sweet treat.

Orange Spice Bath Soak

With so much busyness around, make the most of your bath time, and use it as a little oasis of calm and sanctuary to relax your mind and soothe away your chills.  This is the perfect recipe to revive your senses, and will leave you invigorated , not to mention smelling divine. 

Why not light a candle as you soak, unwind and let your cares melt away.

Ingredients

  • 1 cup of coarse sea salt
  • 5 drops of orange essential oil
  • 5 drops of ginger essential oil / small piece of ginger finely chopped
  • 5 drops of cinnamon essential oil / 1/4 tsp cinnamon powder

Combine all ingredients and add to a warm bath then lie back, take a deep breath…and…relax!

Ezine CoverWelcome back to Fresh in the City… …Hello everyone, it’s that time again - the change of seasons, and a new issue of the fresh in the City ezine! Farewell to British Summertime, and a warm welcome in to the russett toned Autumn and all of her bounty.  I love Autumn - blackberry picking, glorious English apples; Cox’s orange pippins, Scrumptious apples, Limelights and of course Bramleys, perfect for a home-made apple pie, and made even more delicious accompanied by a home-made plum ice cream (especially when it’s healthy, cholesterol and dairy free, and sugar free -  and is based on cashew nuts, agave nectar and the fruits and natural flavourings of your choice - a brilliant alternative and treat for anyone who’s having to steer clear of too much dairy for health reasons but still wants to enjoy this creamy and delicious dessert now and again).  Autumn is harvest time and a reminder to us that a little bit of magic is in the air. It’s also a great time to start taking stock of all the results you’ve achieved during the year so far and to enjoy the fruits of your hardwork - if you’ve been working hard and planting seeds throughout the year.  This issue I’m sharing with you an immune boosting cocktail to support you as the temperature starts to drop (no not the plum ice cream - that’s for treats! Fresh & Seasoned Recipe - Immune Boost Cocktail

*1 mug full of hot water
*15 drops of echinacea tincture
*1 tsp elderberry extract
* 1000mg vitamin C powder
* A drizzle of agave to taste

 Instructions                                                                                                                                                                                                       Add lemon juice, echinacea drops, vit c, and elderberry extract to a mug (try and use your favourite mug) of hot water.  Drizzle in a little agave (to taste), and then stir. Savour each sip of this powerful immune boosting cocktail.

Elder, echinacea and vitamin C are three of the best nutrients to take to protect yourself from colds and flu over the winter time. Elder is an excellent anti-viral, whilst echinacea and vitamin C are superb at supporting your immune system. Add to  this the antiseptic qualities of lemon and you’ll find a mug of this during the colder seasons not only makes a delicious elixir, but will also help to keep your immunity high..

What To Do If You’ve Started To Get a Little Slack Lately…

If you’ve started to get a little slack with your health and fitness programme lately, the best thing to do right away is to be honest about it and bring it into your awareness.  It’s very easy for it to happen; a familiy visit, the kids on school holidays, work pressures building up, a personal crisis, or even a lack of motivation or belief that the goals you are working towards are even possible. If you have slackened up or are not on track with the goals you set yourself this year, here’s what to do:

1) Be honest with yourself - are you on track?

2) Pause - Do not all of a sudden try and beat yourself with a stick to do all the things you said you would earlier in the year.  Regroup and be supportive of yourself - it’s the only way you will move forward in a positive way.

3) Reassess - why haven’t you kept your commitments, what has got in the way? Were the goals realistic, achieveable in the time scale you set yourself? If not re-set your goal posts and timescales. How important is it to you to reach the particular goals you set yourself.  Sometimes we set ourselves goals which aren’t really what we want to achieve when we dig a little deeper.  Make certain you are 100% committed to your outcomes and if you’re not, let them go, because you will only struggle to achieve them and not enjoy the process of working towards something - which is actually one of the best parts!  Let go of any goals that no longer serve you, and get clear on your priorities and the goals that are important to you.

4) Re-commit 

5) Reward yourself for recommitting and mark the moment of recommitment with a gift that will help you get back on track.  Reward yourself for successes along the way.

6) Get support -whether it’s about creating your own support network, or hiring in a professional to help you over some sticky spots and help you transform the journey again into an exciting adventure.  Give yourself the gift of getting the support you need.

Using The Power of Nature to Restore Your Soul

 A couple of weeks ago I went on holiday to the Dingle Penninsula on the West Coast of Ireland - for a break from the city, and a trip to get back in touch with nature and the outdoors.  The weather was fantastic, one of the hottest weeks in Ireland all Summer at 22degrees, and it is one of the most stunning and uplifting places I’ve ever been with a beautiful coast line, representing one of the most Western places in Europe. I have been told by locals I was lucky enough to see it at it’s very best that week.  If anyone is intending on travelling there - it’s worth knowing, in that very small place, they have two wholefood cafes, and a health food shop - An Grianan, which sells raw chocolates, daily fresh juices, sprouted flax crackers, and a delicious range of  salads and soups; these are all served with Irish soda bread of course.  I was astounded and delighted to find it. As for nature and the outdoors - it was abundant, and being immersed in it, with little to do except appreciate it, it was a reminder of how when we do take a little time to stop busying ourselves with to do lists, thoughts and plans, courses and deadlines, and step outside into nature - it really is abundant….

  • whether it’s foraging and finding wild juicy black berries and eating them off a hidden hedgerow (which interestingly some of the local young Irish boys had collected in plastic tubs, and were selling for 2 euros a pot on the side of the road at the Dingle marathon, which was also taking place on the Saturday I was there - a young productivity that does make me smile) or…

  • seeing vast amounts of pink and purple fuchsias growing wildly on the side of every road

  • jumping on a bicycle just before sunset riding to try and catch the last bits of the sun going down

  • climbing up the ‘third sister’ cliff top near Ballyferriter and looking out over to the Atlantic ocean - next stop America!

  • finding a beautiful piece of quartz crystal when you stray from your path a little and do a bit of exploring

  • walking along the sand barefoot, jeans rolled up, and the waves splashing over your toes

  • riding a wave on a bodyboard, experiencing the thrill and aliveness of moving with the power of the water

  • sitting out under the stars - actually seeing so many stars , picking out Orion’s belt and the Plough   

  • watching the sun twinkling on the ocean like golden glitter

So much great stuff, and all so good for the soul - the trick is remembering it - Keep your eyes peeled for Autumn, she’s full of her own treasures.

Welcome back to Fresh in the City…

Happy Summer!…I hope you’re all keeping well and enjoying the British Summertime, and to those of you who are working with me at the moment, I hope you are all progressing on your programmes nicely. Today is the Summer Solstice and of course Fathers Day…I’m going to be spending the first half of my day with Louisa Eyo, helping her out on her living on live food event at the Eighth Day cafe in Manchester…(I’m told that there will be some delicious and exotic lucuma ice cream on the menu at that event) and the second half of the day, I’ll be spending with my Dad playing table tennis, and hopefully enjoying a little more sunshine. The past few months have been very busy for myself and my business, with lots of nutritional work, festival invitations to deliver the fresh in the city smoothie making workshops, travelling, and also the completion of my first recipe book “fresh and seasoned”.  I am delighted to let you know that after 12 months of collating and testing, my deliciously healthy recipe book ‘fresh and seasoned’ is finally ready to be shared.  I am pleased with it, and hope you will gain as much pleasure reading it as I have taken in writing it.  You will be able to purchase and download yourself a copy of that today if that is something that interests you (more on that later).  Apart from that, I’ve a great ice cream recipe of my own to share, some fantastic tips on how to improve the look of your abdominals and tummy (which is what my local gyms challenge has been this month), and some great information about making your own fresh air. Fresh & Seasoned Recipe - Banana Ice Cream

Choose ripe bananas, yellow ones with a few brown speckles on them. Peel them then freeze in plastic sandwich bags over night. In the morning (or whenever you want your creamy treat)…if you have a masticating juicer just pop the bananas through the machine with the blank screen, serve and savour - it really is as simple as that - the perfect consistency and alternative to traditional ice cream. If you don’t have a juicer, then a high speed blender or a food processor will do. You’ll need to slice your bananas into small slices before freezing if you’re processing them. Freeze overnight, then when ready for dessert, thaw the bananas for about 5 minutes and then process in the processor or your high speed blender. It may take a few goes in the processor, but you’ll get there in the end. Serve in a glass dish either alone, or sprinkle with raw cacao nibs for a choc chip effect or alternatively mix with a little vanilla for a banananilla effect. Pure and simple banana ice cream makes a delicious Summer time treat…and is deceptively creamy and indulgent considering it is a dairy-free, low-fat healthy treat. Be sure to choose bananas that are yellow with a speckling of brown to get their optimum ripeness. This recipe requires extra equipment but it is well worth the effort for such a tasty, delicious and creamy dessert. If you buy a masticating juicer which also homogenises foods, you can make nut butters, pates and best of all…sorbets and ice creams using the simplest of ingredients. They cost about £135, but if you love juices and ice cream, then it really is well worth the initial outlay - you will be rewarded.

Fitness Coaching - Toning Up The Tummy

More and more people seem to be struggling with what’s best described as a little ‘fat around the middle’.  Although it’s easy to think doing hundreds of sit-ups is going to solve the situation all by its self (and it certainly will help), it’s worth knowing there are a few other factors in play.

1) Sad as it may sound, you will never have a truly toned tummy if your body fat % is too high - no matter how many sit ups you’ve been doing. The reason being there will always be a layer of fat covering your beautifully toned muscles which can’t be seen because of it.  The best way to reduce body fat is to follow a low GL eating plan which stabilises blood sugar levels, encourages a fast metabolism and supplies a high level of fresh, vibrant wholefoods. It is also essential to do plenty of cardiovascular exercise in the fat burning zone (30-60minutes per day) as well as to build and tone muscle with abdominal specific exercises.

One of the things people don’t always understand is that fat around the middle can be caused by too much stress! Stress triggers the hormone cortisol, and too much cortisol is what causes fat to be laid around the middle.  Too much caffeine can also trigger this stress response, as can too many stimulants of any kind.  If you are stressed do look at ways to manage it.  Several herbs can be very useful, notably ashwagandah - a type of Indian ginseng, which provides energy for the body, but destresses at the same time, and helps the body to cope with an excess of cortisol.

B vitamins are also very helpful when the body is under particular stress.  Massage, saunas, spas, good company and meditation are also brilliant techniques to help the body manage stress in a better way.

As well as stress, some people suffer from symptoms of bloating, which leave their tummy feeling swollen.  These types of symptoms can be helped by attention to food combinations, attention to food sensitivities and allergies, attention to digestion - chewing food well, supporting the digestion with extra enzymes when needed and including more enzyme rich foods in the diet (notably living foods).

Natural Revival - Making Your Own Fresh Air

money-plant.jpgA couple of months ago I watched a fantastic you tube clip about making your own fresh air using house plants - literally detailing how you can produce fresh air from a combination of plants. I felt inspired after watching the clip, so much so I immediately went out and purchased a few additional house plants myself . I do now enjoy sitting in my abundantly plant filled front room, or in the garden.  Sometimes living in the city, you do get a sense you can’t always breathe fully; hence the frequent yearnings for a trip to the countryside to refresh the lungs and clear the head. However, as much as I love the countryside myself… I’d be telling a lie if I also didn’t admit how many aspects I love about living in the city. It is vibrant, exciting, full of opportunities and incredibly stimulating, and I’m personally not at the stage where I’m about to head to the hills. I definitely would like to breathe a little easier whilst I’m in the city though.  More and more people do seem to be suffering with allergies these days, linked to high pollen counts, pets, and dust, but also very much linked to chemicals and pollution. Good quality air is essential to well-being, and with these snippets of information and a little investment in some wonderful house plants you’ll be able to create your very own fresh air haven inside your home and without travelling too far at all.

 

 To make your own fresh air you need:

 * 4 shoulder height areca palms per person 
 * 6-8 waist high mother-in-law’s tongue plants placed in the bedroom (these will convert CO2 into O2 while you sleep)
*  Money Plants which are excellent at removing Formaldehyde

These are the plants that were used in the Paharpur Business Centre in Delhi where much of the research regarding these ‘ indoor fresh air’ experiments has taken place, however, there are other plants which are equally as useful.  Even though I’ve found it easy to source money plants and mother in law’s tongues I’ve found it much harder to find the areca palms, and so have opted for different types of palm in the short-term.  You also don’t need to go out and buy a load of plants in anycase, you can start by asking for cuttings off friends and family members and gradually start to build up your collection.  Other good plants are ivy plants, which offset benzene (so useful to keep in kitchens), chrysanthemum flowers to absorb formaldehyde and benzene, spider plants and corn plants to absorb formaldehyde,  and azaleas, dracaenas, Chinese evergreens, gerbera daisies, bamboo palms, dieffenbachias and peace lillies are all going to improve the air quality and natural beauty of your home. Welcome back to Fresh in the City…

Happy Spring!…It’s a while since I’ve written, but lots of good things have been happening behind the scenes over the dark Winter months, and finally upon us are lighter nights, longer days, and a little more sunshine.  March 21st is the Spring Equinox and the first day of Spring -  a time of renewal, rebirth and the casting off of Winter heaviness.  It’s a natural time to want to detox yourself in lots of ways, whether it’s cleaning your home, cleansing your body or simply clearing up bad habits which have taken root in your life over Winter.  Out with the old and in with the new!  Every year, on the first day of Spring, I make a trip to the Lake District to celebrate the start of Spring and to make a point of noticing what Spring’s entrance brings with it each year.  Already this year I’ve seen abundant daffodils, white blossoms, and beautiful greenery, and I encourage you to take a little time yourself today, or over the next few days, to make your own observation of Spring’s entrance into your year, and to make use of it’s inherent energy to move you forward on your own health journey.  For those of you who are looking for a little inspiration right now, and to get back on the healthy track after the Winter months, there’s plenty on offer in this issue.  I’ve included a time and tested delicious beetroot detox recipe to blast off any Winter heaviness, and give your liver a healthy treat. Fresh & Seasoned Recipe - Beetroot Blast

* 1 raw beetroot, peeled
* 3 large carrots, peeled
* 1/2 cucumber
* 3 sticks of celery
* a small piece of ginger

Pop it all through the juicer, then drink immediately for an instant revival.  Aim to have at least 1 fresh juice (preferably more veggies than fruit) every day for an easy and accessible way to experience an increase in health and vitality during Spring time. For an alternative detox juice try the Jade Garden green juice - another favourite detox juice of mine.  For this you juice cucumber, celery sticks, 1 lime, mint and 1/2 - 1 apple to suit your taste buds.  It’s delicious, refreshing and incredibly good for you. Remember - a minimum of 1 fresh juice per day is needed for good health and vitality.  If you’d like to know more about carrying out a simple detox, have a look at the following link in 7 days time, and I’ll post details of the 10day detox I’m following at the moment. It’s very easy, practical, and simple for anyone who’s new to cleansing.

Total fitness consists of several dimensions including:

* Physical Fitness
* Medical Fitness
* Mental and Emotional Fitness
* Nutritional Fitness
* Social Fitness
* Spiritual Fitness

The most common aspect we associate with fitness is physical fitness. Physical fitness consists of cardiovascular fitness, muscular endurance, muscular strength, flexibility and motor skills, and whilst this is important, it is the development of physical fitness and all the aspects of total fitness (above) that are fundamental to anyone who is looking to improve their health, whatever their starting point.

When starting out on a programme of health change, it is important to have a written and recorded base line of your starting point.  This will include physical fitness statistics; measurements, body fat%, fitness test results, but it will also include a record of the other fitness elements (medical,  mental & emotional, nutritional, social and spiritual).  Having this information recorded is essential if you are to track your progress and observe your results.

A valuable exercise to focus the mind is to create a results board.  This is a creative and visual exercise which allows you to clarify the results you’re looking for from your fitness and training programme.  To carry out this exercise you need a blank A3 sheet of paper, a stack of magazines old or new, some glue, and a pair of scissors. Spend an evening gathering images which represent the results you’re looking for out of your fitness programme.  Select images of the healthy foods you want to be eating, and siginificant images of the people, lifestyle, and the physiques you are working towards. Include photos of your family and friends if these are important for your particular results board.  Use pictures of places you will be going to or visiting, and of activities you intend to take part in.  Include anything which is important to you at the current time. Taking the time to complete your results board will serve you well for months to come as you progress with your fitness plans.  It will provide a quick visual support to remind you of your plans and this will help you stay on track, or help you quickly get back on track at times when you may stray and lose your fitness focus.  Once it’s completed place it somewhere prominent where it can support you.

The final exercise to support you with your fitness progress is to create a fitness and training folder to record and store all your fitness progress in.   Once a week you will be recording an entry into your folder charting your progress in each of the total fitness elements (physical, mental & emotional, nutritional, medical, social, spiritual) and dating your entry.  Having a written record makes you accountable for your behaviour, is a motivator in itself, and makes it easy to chart progress.  With a base line, a results board, a system for accountability and some motivation - it’s much more easy to make consistent, permanent and successful progress.

Natural Revival - Papaya Exfoliating Mask

PapayaApplying a regular papaya face mask is a lovely habit to indulge in, especially when coupled with a long essential oil filled bath, and a very good book.  It is the enzymes in the papaya which make it so effective as an exfoliator.  Papain and the alphahydroxy acids help to remove dead skin cells, and make way for new dewy skin.  Papaya is full of antioxidants, not to mention being delicious.  No eating though! This one is strictly food for the skin.  The recipe used here is one that was shared with me by ‘On The Eighth Day’s’ skin care specialist Jeniya Marsh and is perfect for Spring time skin renewal.

Ingredients

* 1 cup of papaya flesh
* 1/2 cup of banana for dry skin / apple for oily skin
* 1 tbsp honey

Puree the fruit in a blender or food processor.  Add the honey and mix into a smooth paste.  Apply to pre-cleansed skin (making sure to avoid the delicate eye area). Immerse yourself in a pre-pepared essential oil bath, or lie down on a bed with very good book and relax.  After 20-30 minutes, remove the mask with tepid water. Moisturise with your favourite nourishing cream or lotion…and you’re done!
